

A spread for 3 good pals to enjoy

Ingredients:
500g cocoa powder
5 egg whites beaten
200g butter unsalted
1 kg self-raising plain flour sifted
3 tablespoon baking powder
1 1/2 cup coarse sugar
1 tablespoon salt
1 tablespoon yeast
Spread:
Chocolate butter cream
finely chopped soft dry cherries
Special Equipment:
1 square or rectangular baking tray
Why is it a favourite?
Adding cherries in the spread soften the whole traditional hard cake and delights the palate with a light and fresh taste.
Method:
1) In a mixing bowl, beat the ingredients except the spread till of a smooth consistence.
2) In a preheated oven of 200 degrees, bake the mixture in the tray for 40 minutes.
3) Cool the cake for 1 hour before applying the spread on one side.
4) Roll the cake and cut into slices for the trio to dine.
